Eryngium Maritimum - Sea Holly

Not a plant I have tried, but I was struck by its beauty. The main edible part is the root, but young leaves can also be eaten. However, it's an uncommon and beautiful plant and it is illegal to dig it up in Britain - unless it's growing on private property and you have permission!
